Sophie Guillemot-Michel returned to work with her parents at their top-quality, biodynamic domaine in the Mâconnais in 2012. One of her ventures has been the production of Marc de Bourgogne- a traditional Burgundian eau de vie that is now only rarely produced. “Marc” is the pulp left in grapes once they have been pressed to make wine; it is rich in sugar and aromatics. Shrivelled, pressed Chardonnay grapes are destemmed (to give finesse to the eau de vie) and allowed to ferment in sealed vats, to preserve aromatic freshness. The distillation process takes place in early winter, giving a white eau de vie. This is then aged in old oak barrels for 2 years, allowing the Marc to gain flavoural complexity, creamy, round texture and take on its caramel colour.
We are thrilled to have shipped Sophie`s 2014 Marc. This outstanding, elegant digestif has aromas of almonds, apricots, lemon peel and smoky spice. We highly recommend pouring it on its own or with a square of high quality dark chocolate.
