This Grand Cru, grower champagne is made in tiny quantities by Louis Cheval-Gatinois. Owning 7.5 hectares in the village of Aÿ, , the blend is dominated by Pinot Noir – bringing structure and vinosity – with 10% Chardonnay contributing freshness and creaminess of texture. Appellation Contrôlée regulations stipulate a minimum of 15 months maturation for Non Vintage champagnes, however the Gatinois Brut Tradition is always aged in the family’s cellars for at least 36 months. This may help to explain the richness and finesse of this champagne. The colour is a thrilling, mid-gold, with tiny, persistent bubbles. Aromas are intense and lifted, flavours recalling brioche, hazelnuts and delicately perfumed red berries. Full bodied, with marked structure, the finish is long lingering and refreshing. This is a delicious aperitif champagne, but its depth and power are also well suited to dishes such as pan-fried scallops or sea bass.
